Pinterest Projects: Part 2


Here is another installment of things I've tried from Pinterest. Each title is linked to its respective source with the detailed recipe or instructions.

Art Prints - I'm working on a wall collage for the kitchen above Raegan's table. I have made all of the pieces so far and might attempt hanging them this weekend.


Parmesan Crusted Tilapia - This was super easy, light, and delicious.


Dr. Oz's Green Drink - Oprah called it "a glass of fresh." Sorry, O. I wanted to like it, but I couldn't get past the little bits of spinach that wouldn't puree. Blech!
Homemade Ranch Dressing - Man, this was good, and so worth the tiny bit of effort. It is so much better than any bottled Ranch, and does not have all of the additives found on the shelves. We used it for dipping with Parmesan fries and quesadillas. It ran out yesterday, and I'm jonesing for more already.

Oven Baked Parmesan "Fries" - These were so flavorful!! They received rave reviews when we grilled out Saturday night with Tony and Shaina. I took a short cut and it worked out great. The list of ingredients includes several herbs and spices that I didn't have (but probably should). I realized that it was all of the ingredients in Italian seasoning, so I added up the amounts and put that total amount of Italian seasoning. So easy and much better for you than store-bought frozen fries, or actual fried potatoes for sure.


Garlic Rice Pilaf - This was easy to make and turned out very light and fluffy. There was plenty leftover, but unfortunately it was too dry the next day.


Coconut Chicken with Apricot Sauce - This is another great recipe for an easy dinner. I made it with the garlic rice and asparagus. The sauce is just apricot preserves and Dijon mustard. If you're like me and immediately turn down a recipe based on weird combinations, give it a try. I knew I would like it based on another recipe I love that includes orange marmalade and Dijon mustard in the sauce.

21 Days to Getting Organized - I haven't stayed on track, but I have made good progress in the pantry, our closets, and Raegan's outgrown clothes. I'm not bothering with before & after photos; I just want it done!



Pendant Light - This is replacing our standard builder's grade lighting over the dining room table. I bought a bigger shade at Target to replace the mini shade.


Twig Vase - I collected twigs from a friend's yard, and I'm almost finished with this little project. I'm going to use it for utensils for our Fall play group on Monday and then for flowers somewhere in the kitchen.

Pumpkin Chocolate Chip Cookies - I'm making these for play group on Monday and will add them to my next post about projects.
